When I was in at Goshen College, a few of my college friends and I decided to swap recipes. This recipe came from my friend Lisa, and I hadn't tried it until recently. It has now become a family favorite! Thanks Lisa!
In this phase of my life, I think a lot about saving time, so instead of chopping a real onion, I used minced onion. Instead of cooking chicken breasts, I buy canned cooked chicken breasts. You get the picture.

Chicken Tetrazinni
2 c. broken spaghetti (we use angel hair)
4 c. chicken broth (or water and bouillion)
2 cans Cream of Mushroom soup
2 c. cooked chicken or turkey (haven't made it with turkey yet)
1/2 c. chopped onion (or sprinkle in minced)
1 can mushrooms (can't handle mushrooms so I don't use them)
1/2 c. Velveeta
Add the cream of mushroom soup, chicken, onion, mushrooms (if you choose), and Velveeta. You can top the casserole with bread crumbs. Bake at 325 for 30 minutes.

Also, I wanted to tell you that Joc and I are free the weekend of the 28th the babysit. I have a volleyball tournament on that saturday, but jocelyn can handle that : )
